The wires on the IAT had 65 and 127 on them
Lower (the larger ECU plug) has 81 pins. Where is pin 127?

The wire is labelled 127 and runs to a group of wires (which i think are live wires for the coils,
Injectors and o2 sensors) that all connect to a fatter wire with 147 wrote on that runs towards the cabin and guessing the fuses

I would not concern myself with wire numbers as I have no reference info telling me what they are. What is important is that wiring from IAT socket connects to the right pins on lower ECU connector.

Sorted swapped the plugs around after testing them with a meter to see where they went and car running great now, ic fan doesnt kick in right away and engine light now off

Someone must have connected it up wrong somewhere in the past

Excellent work! Great bit of diagnosis there.
